Blog Recipe Honor Roll

This is probably going to sound weird (and be weird), but I love to read recipes.

Like I enjoy sitting down with a cookbook and legitimately reading through it. Not just looking at the pretty pictures and skimming through recipe titles for something I might want to make, but reading ingredient lists and even instructions for things I have no intention of ever making.

I inherited a stack of cookbooks from my grandma, and the night I got them, I sat there and read them for hours. And it was damn fun.

That’s weird, right? That can’t be normal.

You’d think all that time I wasted spent reading recipes would have taught me something about how to cook (like not just following recipes but actually making up my own meals). But no, still no concept of how to do that. I mean, I’ll throw together the occasional 100% original smoothie concoction, but that’s not exactly brain surgery. (Then again, I bet there are plenty of brain surgeons out there who wouldn’t feel confident assembling a smoothie off-recipe.)

So this blog will remain not a food blog.

Which is too bad, because I love food blogs. So much, in fact, that the recipes I make are from them more often than not. (Sorry, grandma’s cookbooks.)

Today, I’ve decided to pay homage to some of the blog food I’ve made recently. I try to keep an eye out for things that look husband-friendly (such as anything with the word “buffalo” in it) while still being somewhat healthy. (Of course, we have our splurges here and there.)

The list below includes things I’ve made in the past couple of months that have received top honors in my book.

Buffalo Chicken EnchiladasPrevention RD. I probably make these every other week. So easy, good, cheap, and healthy that it’s hard to resist. Also, husband approved.

Buffalo Chicken Egg RollsIowa Girl Eats. For when we need a break from the almost-identical enchiladas…actually, I’ve only made these once and they were great, but I couldn’t really taste the cream cheese, so I thought there might have been some wasted calories there.

Loaded Cheeseburger Egg RollsHeather’s Dish. I’ve been obsessed with those little egg roll wrappers lately. Just made these tonight and they were fantastic! Rachael Ray has a similar version that includes Worcestershire sauce that I might have to try too…

Stuffed ChickenFitnessista. Chicken stuffed with goat cheese, spinach, and sundried tomatoes. I was a HUGE fan. Probably too chick foody for the hubby, but he was a champ.

Skinny Swedish MeatballsIowa Girls Eats. Amazing! I remember wanting like 10x more meatballs, though.

Chicken GyrosThe Girl Who Ate Everything. Ok, these can’t reeaaally compete with REAL gyros, but what do you expect out of poor little chicken? They still have cucumber sauce in them and are therefore crazy awesome.

The Best Lasagna EverPioneer Woman. This is not winning a healthy recipe award or anything. I mean, it’s lasagna. It involves sausage. Whatever. But there are SOO many comments on it, wherein people are offering their first born children to the Pioneer Woman in thanks for this recipe, that I just had to know what all the fuss was about. And they might just be right…if you have a lasagna recipe that can top this, please let me know ASAP.

Mexican Stuffed ShellsThe Girl Who Ate Everything. Oh yeah, the other hubby-friendly keyword I look for is “Mexican.” You just can’t go wrong.

Chicken Pot PieThe Girl Who Ate Everything. I made this on a really hot day so it felt a little unnatural, but when the pot pie mood strikes, you have to just go for it. There is just no summer alternative.

Cheesy Meat Loaf MinisCooking Light. This is not from a blog but I had to sneak it in because the hubby goes cuh-raaazy over these. The secret is dijon mustard + horseradish. Definitely a big seller over here.

Cake Batter TrufflesThe Girl Who Ate Everything. So this is one of those splurges I was talking about. Please stop what you’re doing and go make these right now. I’ve made these several times, and basically, by the second bite everyone who’s tried them has proposed marriage to me.
