Guys, I’m so scared.
There’s a nasty stomach bug going around the city and people are dropping like flies. FLIES.
Every few minutes I have a moment of panic where my brain goes, “Is that…does my stomach feel a little…QUEASY??” But no, it’s just anxiety about potentially spending the weekend in Vomtown. (Sorry for the visual.)
On a less disgusting note, I came into work this morning to a nice little surprise:
(P.S. Yes, that means I’m doing the lunch-break-blog thing. Which means I’m simultaneously writing this and eating a messy bowl of Trader Joe’s thai noodles. Guess how pretty my keyboard looks?)
Homemade truffles and a bottle of bubbly from management. Did I mention I love having a job around the holidays? Nobody surprised me with festive alcohol when I was a stay-at-home mom (despite me needing it more then…ahh the joke that will never die, right?).
So I’m here today to share my holiday date ball recipe, as promised!
I’m not going to pretend they taste exactly like the INSANE truffles my manager gave me, which melt in your mouth the way only desserts with tons of butter and sugar and naughty deliciousness can, but I think they definitely belong in the “no WAY this is healthy” category.
The center is every bit as soft, tasty, and brownie-like as it looks.
I mean, you can tell by the horrible photography that I wouldn’t have the Photoshop chops to suggest otherwise.
I used to always put chocolate chips in my date balls, until I had an epiphany: if you put them on the outside instead, you get more chocolatey flavor for the same amount of calories. Plus, they seem fancier and naughtier.
Sprinkles are optional–and, ideally, could be more holiday appropriate than the mulitcolored-Snoopy’s-Christmas ones I had lying around.
All joking aside, I seriously think you should make these. They’re tasty. That’s all.
Double Chocolate Peppermint Holiday Date Balls
1 c. walnuts
1 (heaping) c. dates
1/2 c. coconut
4 T cocoa
1/2 tsp. vanilla
1/4 tsp. peppermint extract
2 c. Nestle Dark Chocolate Morsels
1/2 tsp. peppermint extract
Process walnuts in a food processor until ground into a soft meal. Add dates, coconut, and cocoa, and process until mixture forms a dough. Then add in vanilla and peppermint, and process again.
Roll dough into balls and place them on wax paper on a plate. Refrigerate until firm, approx. 30 minutes.
Melt chocolate morsels (I do it in the microwave, 40 seconds at a time + stirring in between). Add peppermint and stir.
Drop dough balls into the chocolate one at a time, using a spoon to roll them around for coverage. To take them out, lift them up with the spoon and tap the spoon against the side of the bowl to shake off access chocolate. Decorate with sprinkles (optionally), then place back on wax paper to set.
Store in the refrigerator.
Shhh…don’t tell anyone they’re healthy!
