I’m not usually one to fall for Pinterest hype. When people pin things with captions like OMG THESE BROWNIES WILL MAKE YOUR BRAIN EXPLODE, my knee-jerk response is skepticism.
It might get me to look, but I’ll come at it with an extra-critical eye, McKayla style.
So when I encountered something called Man Pleasing Chicken and read the caption “So Good it Can’t Be Described, Explosion on Your Taste Buds Chicken,” I thought: gimme a breeeaaak. I guess I’m just that jaded.
But the ingredient list (dijon mustard, maple syrup, and rice vinegar) looked promising. I love all that stuff! I couldn’t fathom what the three of them tasted like together, but I was curious to find out.
You can probably guess where this is going…guys, this is really, really, crazy good chicken. I made it last night and we. LOVED. It.
Brent had thirds. I had thirds. We cleaned out the whole dang pan. I’m actually a little mad about that, now, because I definitely kept eating after I was full and now there are no leftovers today.
What I’m saying is: when you do your meal panning for the week, make sure this is on the list. Then, after you make it, come back to this post and tell me how your life has been changed.
A couple notes…
–Use real maple syrup. That was what I happened to have anyway, but everybody in the comments mentioned that that was critical.
–450 degrees seems crazy high for baking chicken, but it was perfect. I even cooked ours a little longer than the suggested time, and it was still very tender and juicy.
–People commented that brand name Dijon mustard is important, but I used generic and it was awesome. Wait, maybe it can be even BETTER…
–I think it’s important to use thighs. (They’re cheaper anyway!) I also removed the skins before baking. I doubt this would have turned out as good with breasts or skin-on thighs.
With Trader Joe’s prewashed/pretrimmed green beans…I’ll be honest, I wasn’t that impressed with the beans. Which is weird for TJ’s!

We are trying this tonight! If I am serving 2 adults and 4 kids ( 2 of them eat decent amounts) Do you think I should double the recipe?
You might want to triple it! I think I used 4 lbs. of chicken and Brent & I devoured it. I’d say just pick up the amount of chicken you think you’d need, and adjust the rest of the ingredients accordingly. Leftovers are a good thing! :)

I have had this pinned forever and for some reason haven’t gotten around to making it yet…. sounds like it really is as good as everyone says! Yum! Im planning on having leftover chili tonight.
