New go-to dinner and my granted wish

I’ve been really devoted to this stuffed chicken recipe by Gina (the Fitnessista) for a long time, but I think I might have just converted.

Last night, I made this version from Iowa Girl Eats and…well, WOW.


The key ingredients: tomato basil flavored feta and tomato basil flavored Laughing Cow cheese. It’s never even occurred to me to buy the flavored versions of these things before—I’ve been missing out.

I was also pretty pumped to find something to do with my leftover basil from the farmer’s market. It was borderline stressful getting that much basil at once!

Anyway, if you’re looking for a quick and easy dinner recipe for tonight, try this out! (Even Brent gave it his blessing—which is pretty much a given anytime a food involves cheese.) Or try Gina’s, if you haven’t already…either way, you can’t go wrong.

Tonight, we’re heading up north to spend the weekend at a cabin with Brent’s family. (Isn’t that possibly the most cliché Midwestern thing you can do?) I can’t wait! Fingers crossed that the little dude is able to adjust to his new surroundings (especially to the DREADED Pack n Play—he likes having lots of roll space, and the PnP just doesn’t cut it).

So today is all about packing and food prep. Yesterday, I grabbed a few snacky things for the trip, like the new Special K popcorn chips:


Brent loved them—I thought they were just ok. They were a little softer than you’d expect a chip to be, which I probably should have seen coming since it’s popcorn, but it was kind of an unpleasant surprise for me. Plus, I felt like that whole box contained approximately 8 total chips.

Yogurt-covered peanuts (but don’t they taste like frosting-covered peanuts?) and honey roasted mixed nuts. Yum.

And one final impulse purchase (that turned out awesome):


According to the box, these are magical Swedish cookies that can predict your future. You hold a cookie in your hand and press down on it with the index finger of your other hand while making your wish. If the cookie breaks into 3 pieces, your wish will come true.




I wish I could tell you my wish, but I think I should keep it to myself until it happens (which makes no sense, now that I know it definitely will). Haha.

As for actual food for the trip, we all split up meals, and Brent and I are in charge of a breakfast and lunch. I think we’re going to do breakfast burritos and pulled pork sandwiches. I also want to make this three bean salad, and I’m considering bringing this healthified tuna salad I just discovered on Anne’s blog, just in case I need a break from all the burgers/brats/misc. heavy cabin food. :)

So even though it’s now September (insert shocked comment), I’m secretly still working on the August Pinterest Challenge. As soon as Mason goes down for his nap today, I’m going to tackle this bad boy:

There, now I said it on the internet, so it has to happen.

Maybe I should run it by a Swedish cookie to make sure it’s really meant to be.

Flavored Laughing Cow is a staple in our house — I eat it on pretty much everything!!

That chicken looks amazing, one of my goals this month was to try 3 new recipes and that will definitely be one of them! Thanks for sharing!

When I’m tired (like now!!!), I pretty much want to eat whatever is presented in front of me (physically in front or through a computer screen in front). And let me tell ya, good thing it’s through a computer screen right now, or I might have my cal intake for the day before 10:30am haha

Iowa Girl always makes the best recipes! She’s so creative and her pictures are amazing! FYI a great thing to do with a big bunch of basil is make a quick pesto, pour it into ice cube trays and freeze for later! I make it without the cheese and just add it to my crushed tomatoes for a quick tomato sauce. Hope you have a great weekend! Sounds like fun!

I just made Gina’s chicken the other night and I put Kristin’s chicken and Anne’s chicken salad on my “to make” list! Ha ha – you’re all great bloggers :)

Flavored cheeses are awesome – I need to remember to use them more in things rather than just eating them on crackers and salads.

I am glad that I am not the only one who 1. is still working on the August Pinterest Challenge and 2. impulse buys yogurt covered and honey roasted things!! Have fun at the cabin – fingers crossed for pack and play success. :)
